Meal Monday: Banana Bread Muffins

Note: One good thing about marked down bananas is you can use them for all sorts of recipes. Here's one that I think you'll like.

Sarah's Banana Bread Muffins Recipe


You'll Need
1/2 cup white sugar
1 egg
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup vegetable oil
3 ripe bananas, mashed
1 teaspoon baking soda


1) Mix sugar, oil, and egg.

2) Add bananas

3) Add flour, baking soda, and salt.
Stir until smooth.
Spoon batter in muffin cups.
Bake 30 to 40 minutes.

Couple things to mention:
1) I halved the original recipe's call for sugar.
2) You could substitute 1 cup wheat flour instead of 2 cups white.
3) My muffins take 30 minutes to bake.
